Ingredients: 

  • 100g dark chocolate with a minimum of 80% cocoa solids (22g) 
  • 60g butter or coconut oil (0g) 
  • 1 pinch salt 
  • 60 ml unsweetened peanut butter (crunchy or smooth) (0g) 
  • ½ teaspoon vanilla extract (0g) 
  • 1 teaspoon ground cinnamon or ground cardamom (optional) (0g) 
  • 45g salted peanuts, finely chopped (can use hazelnuts, almonds, brazil nuts too) (0g)

Method:

1. Melt chocolate and butter or coconut oil in the microwave oven or in a glass bowl over a pan of boiling water. Set the melted chocolate aside to cool. 

2. Add all remaining ingredients except the nuts and mix until incorporated. 

3. Pour the batter into a small greased baking dish lined with parchment paper, no bigger than 4 x 6" (10 x 15 cm). 

4. Top with finely chopped peanuts (or other nuts). Place in the refrigerator to chill. 

5. When the batter is set, cut into small squares. They should be small (2.5cm square) 

6. Could also flavour with orange or peppermint extract if you like 

 

 Total carbs = 22g 12 squares = 22÷12 = 1.8g = 2g carbs per square
